MAREMMA DUCK
The name “Maremma” comes from the Maremma dog — an Italian guardian breed traditionally used to protect livestock. At Tathra Place, these dogs live among the ducks, keeping them safe from predators without stress or interference. This natural guardianship allows the ducks to roam freely, resulting in healthier flocks and meat renowned for its tenderness and flavour.

At Tathra Place, Luke and his family practice regenerative farming through biomimicry — working with nature to restore soils and rebuild ecosystems. By moving cattle in sync with the land, they create nutrient-rich pastures and a thriving environment for all species. This thoughtful approach produces beef that is rich in flavour, integrity, and nourishment for the diner.
AQUNA COD
From Griffith in the Riverina, Aquna cod are raised in a land-based, closed-loop aquaculture system designed for purity and sustainability. This innovation delivers caviar and fish with a clean, buttery flavour and consistent quality, representing the best of modern Australian farming.
